WOW!<\/p>\n<p>To celebrate there are fun events happening in <a href=\"https:\/\/ooh.li\/0ff0d9d\">Los Angeles<\/a> and<a href=\"https:\/\/ooh.li\/50393b4\"> San Diego<\/a>&nbsp;. If you can&#8217;t make it to the event they have chef created recipes to try using their delicious salsas.<\/p>\n<p>I use their salsas in when I\u2019m in need for a quick meal, the recipes are consistent, authentic and delicious. &nbsp;This recipe for cauliflower roasted salad is just one of them that highlights the authentic flavors of Mexico.<\/p>\n<p>For the roasted vegetables<br \/>\n1 pound Brussels sprouts loose leaves removed<br \/>\n1 small head cauliflower separated into florets<br \/>\n2 Tablespoons olive oil<br \/>\nsalt and pepper to tasteto taste<br \/>\nFor the Salsa Verde<br \/>\n1 cup fresh basil leaves<br \/>\n1 cup fresh &nbsp;cilantro<br \/>\n1\/4 cup LA VICTORIA\u00ae Green Taco Sauce (mild)<br \/>\n2 Tablespoons lemon juice<br \/>\n2 Tablespoons extra virgin olive oil<br \/>\n3&#8217;Tablespoons pepita or pumpkin seeds soaked in warm water for an hour<br \/>\nsalt to taste as needed.<\/p>\n<p>Instructions<br \/>\nPreheat the oven to 400 degrees F. While the oven heats, prep the veggies.<br \/>\nLine a large baking sheet with parchment paper.<br \/>\nToss the Brussels sprouts and cauliflower with the olive oil, salt and pepper. Spread the vegetables out on the baking sheet in a single layer.<br \/>\nRoast until the vegetables begin to brown, about 15 to 20 minutes. Meanwhile blend the ingredients for the sauce till smooth.<br \/>\nRemove the vegetables from the oven.<br \/>\nTo serve, place the vegetables in a serving dish and drizzle with the Salsa Verde Pistou or serve as a dipping sauce on the side.
