One of my favorite fresh beans. I made this Umbrian fava stew for brunch to go with poached eggs. But honestly it&#8217;s perfectly good as is with some good crusty Italian bread with or without eggs.<\/p>\n<p>FResh favas\u00a0are available fresh in spring through early summer. If you have a hard time finding fresh favas beans use lima beans or edamame. The recipe also calls for peas, greens and a few other spring vegetables. For the greens Tuscan kale, red chard or escarole work really well, they are traditional to this recipe. This simple stew can be served with pasta, but I like it with toasted bread and a good drizzle of cold pressed olive oil. Adding a poached egg makes it a delicious nutritious Sunday brunch.<\/p>\n<p>I have made two variations of this dish. One as the recipe describes and the second I smashed 3\/4s of the fava beans with an avocado and spread it on my toast like a spread. Both are fabulous ways to serve. I recommend you try both.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6512.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-3586\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6512-819x1024.jpg?resize=819%2C1024\" alt=\"\" width=\"819\" height=\"1024\" \/><\/a><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6709.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-3584\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6709-819x1024.jpg?resize=819%2C1024\" alt=\"\" width=\"819\" height=\"1024\" \/><\/a> <a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6710.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-3585\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/05\/IMG_6710-819x1024.jpg?resize=819%2C1024\" alt=\"\" width=\"819\" height=\"1024\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><b><u>Ingredients<\/u><\/b><\/p>\n<ul>\n<li>1 cup organic fresh or frozen fava beans or Lima beans or edamame lightly blanched<\/li>\n<li>\u00bd cup shelled fresh or frozen organic peas frozen peas, thawed<\/li>\n<li>2 cups Tuscan kale or red chard organic , torn into bite-size pieces<\/li>\n<li class=\"ingredient\" data-reactid=\"174\">\n<div class=\"ingredients__text\" data-reactid=\"175\">\u00bc cup olive oil, plus more for drizzling<\/div>\n<\/li>\n<li>1 small onion thinly sliced<\/li>\n<li>1\/2 teaspoon red chile flakes<\/li>\n<li>4 small garlic cloves, finely chopped<\/li>\n<li>8 oz. tender asparagus \u00a0cut on a diagonal into 1\u201d pieces<\/li>\n<li>4&#8217;oz. baby zucchini with blossoms OR \u00bd lb prepared artichokes, fresh or frozen<\/li>\n<li class=\"ingredient\" data-reactid=\"184\">\n<div class=\"ingredients__text\" data-reactid=\"185\">\u00bc cup fresh basil leaves, torn<\/div>\n<\/li>\n<li class=\"ingredient\" data-reactid=\"186\">\n<div class=\"ingredients__text\" data-reactid=\"187\">\u00bc cup fresh mint leaves, torn<\/div>\n<\/li>\n<\/ul>\n<p><b><u>To serve<\/u><\/b><\/p>\n<ul>\n<li>homemade or store-bought good quality pesto<\/li>\n<li>Kosher salt and pepper<\/li>\n<li>toasted crusty Italian bread<\/li>\n<li>For poached eggs (2 tablespoons white wine vinegar+\u00a04 large eggs)<\/li>\n<li>2 oz. freshly grated Parmesan or Pecorino Romano, optional<\/li>\n<li>cold pressed extra virgin olive oil<\/li>\n<\/ul>\n<p><b><u>Here&#8217;s how<\/u><\/b><\/p>\n<p>Heat 2 tablespoons oil in a medium saucepan over medium heat until oil begins to sizzle . Add sliced onions, garlic, chili, asparagus and whole baby zucchini or artichokes if using.<\/p>\n<p>Lower the heat to medium cover cook, shaking pan occasionally, until asparagus is crisp-tender, about 2 minutes. Add scallions, fava beans, and peas; cover and cook until fava beans are just tender, about 2 minutes.<br \/>\nAdd greens of your choice and cook, tossing, until the leaves are wilted asparagus and zucchini is soft but not mushy. Season\u00a0with salt and pepper.<\/p>\n<p><b><u>For poached eggs<\/u><\/b><br \/>\nBring \u00a02\u201d water to a boil in a large saucepan; reduce heat so water is at a gentle simmer, \u00a0add vinegar. Crack an egg into a small bowl, then gently slide egg into water.<\/p>\n<p>Repeat with remaining eggs, waiting until whites of eggs in water are opaque before adding the next egg (about a minute apart).<\/p>\n<p>Poach until whites are firm and yolks start to firm up, about 3 minutes.
