However this&nbsp;soup is made with moong beans, just as delicious and a perfect way to warm up on those cold nights.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/02\/IMG_4420.jpg\" rel=\"attachment wp-att-3319\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-3319 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/02\/IMG_4420-687x1024.jpg?resize=687%2C1024\" alt=\"IMG_4420\" width=\"687\" height=\"1024\"><\/a> <a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/02\/IMG_4429.jpg\" rel=\"attachment wp-att-3320\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-3320 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/02\/IMG_4429-820x1024.jpg?resize=820%2C1024\" alt=\"IMG_4429\" width=\"820\" height=\"1024\"><\/a><\/p>\n<p>Here is the recipe<\/p>\n<p><b><i><u>Ingredients<\/u><\/i><\/b><\/p>\n<ul>\n<li>3\/4 cups whole moong beans washed and soaked overnight<\/li>\n<li>1 &nbsp;1-1\/4 cup white beans of your choice,like &nbsp;canned cannelini or northern white beans<\/li>\n<li>1 medium onion, diced<\/li>\n<li>2 pasilla or poblano chillies, leave in the seeds or de-seeded depending on your heat tolerance and diced<\/li>\n<li>4 cloves of garlic, minced<\/li>\n<li>1 cup diced tomatillos<\/li>\n<li>2 tablespoons any neutral oil<\/li>\n<li>\u00bc teaspoon Mexican oregano<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>freshly ground black pepper<\/li>\n<li>4-5 cups of vegetable or bean broth<\/li>\n<li>sea salt<\/li>\n<li><b><u>for the avocado crema<\/u><\/b><\/li>\n<li>1 large hass avocado peeled and diced<\/li>\n<li>1 cup of plain cashew yogurt or yogurt of your choice<\/li>\n<li>\u00bc teaspoon of sea salt<\/li>\n<li>1 tablespoon of lime juice<\/li>\n<li>a handful of cilantro, coarsely chopped<\/li>\n<li>&nbsp;<b><u>toppings: <\/u><\/b><\/li>\n<li>sliced radishes<\/li>\n<li>green scallions<\/li>\n<li>lime<\/li>\n<li>hot sauce<\/li>\n<li>jalepeno<\/li>\n<\/ul>\n<p>METHOD<\/p>\n<p>In a large, heavy-bottomed pot, heat oil over medium heat and add the onions, and chilles.<\/p>\n<p>Cook for about 5 minutes, until the onions are translucent and the chilled are soft. Add the garlic, &nbsp;tomatillos and cook for another two minutes.<\/p>\n<p>Add the oregano, cumin, and cook while stirring for about 1 minute.<\/p>\n<p>Then add the moong beans, white beans and vegetable broth. Stir and bring it to a boil, then reduce to a low simmer. Cook covered for about 30&#8217;minutes.<\/p>\n<p>The moong beans should be tender but not mushy. Taste and adjust the salt if needed this will depend on how salty your broth is.<\/p>\n<p>For the crema. Blend everything in a food processor till smooth.
