This ramen soup is nutty from the rich (plant milk) broth, slurp-able fresh ramen noodles, along with spicy ground meat in this case tofu, aromatic blend of seasonings including garlic, ginger and doubanjiang (fermented bean paste) and topped with blanched vegetables. It\u2019s comforting, savory, and comes together in under 20 minutes.<\/p>\n\n\n\n<p class=\"\">There are a a few different elements to the recipe, but they\u2019re a<strong>s simple as blanching veggies, cooking noodles, warming broth etc.<\/strong> The recipe easily scales to the number of diners, so it\u2019s easy to feed two or a crowd without much effort. If fresh is not available dried ramen noodles work just fine simply cook according to directions.<\/li>\n\n\n\n<li class=\"\"><strong>Sesame Paste<\/strong>: traditionally Chinese toasted sesame paste is recommended, I prefer tahini as it\u2019s easily available.<\/li>\n\n\n\n<li class=\"\"><strong>Plant Milk<\/strong>: unsweetened soy milk is best for this recipe.&nbsp;Sub with oat milk or cashew milk if you avoid soy. <\/li>\n\n\n\n<li class=\"\"><strong>Chilli Oil<\/strong>: any garlic+sesame+ chilli oil will work here, preferably Japanese as they\u2019re not as spicy.<\/li>\n\n\n\n<li class=\"\"><strong>Ground Protein<\/strong>: The protein is a garnish, but if you\u2019re serving it as a meal you can bump up the quantity.\u00a0Sub with ground chicken, turkey or your favorite mince, they all work well. We love it with firm crumbled tofu.<\/li>\n\n\n\n<li class=\"\"><strong>Greens \u2013\u00a0<\/strong>We love using blanched baby bok choy, shiitake mushrooms or even spinach, but any Asian greens such as choy sum, gailan or baby broccoli work really well. Simply blanch and use.<\/li>\n\n\n\n<li class=\"\"><strong>&nbsp;<\/strong><a href=\"https:\/\/themalamarket.com\/products\/3-year-aged-pixian-chili-bean-paste-doubanjiang?_pos=2&amp;_sid=2f7b35e5c&amp;_ss=r\" title=\"\">Doubanjiang<\/a>: This is the only specialty ingredient I recommend and a hard one to substitute. I get spending 25$ for one recipe doesn\u2019t make sense. In that case use a similar fermented chilli bean paste or if you prefer a milder option miso may work too. Divide the paste equally into each ramen bowl as layer one.\u00a0<\/li>\n\n\n\n<li class=\"\"><strong>BROTH<\/strong>: combine unsweetened flavorless plant milk with veggie or chicken broth, bring it up to a boil then a gentle simmer. Keep warm.<\/li>\n\n\n\n<li class=\"\"><strong>COOK THE RAMEN NOODLES:<\/strong> cook the noodles based on the package instructions. <\/li>\n\n\n\n<li class=\"\"><strong>PREP THE VEGGIES<\/strong>: blanch the bok choy, shiitake mushrooms or other vegetables using. <\/li>\n\n\n\n<li class=\"\"><strong>COOK THE TOFU:<\/strong> &nbsp;warm a little oil on a wok or saut\u00e9 pan. &nbsp;Add&nbsp;garlic&nbsp;and&nbsp;ginger,&nbsp;saut\u00e9 until fragrant. Add the&nbsp;crumbled tofu&nbsp;and saut\u00e9 until slightly browned, 5-7 minutes. Add&nbsp;the (chilli-bean paste\/doubanjiang)&nbsp;soy sauce&nbsp;and&nbsp;sake<strong>,&nbsp;<\/strong>and cook until well.<\/li>\n\n\n\n<li class=\"\"><strong>ASSEMBLE<\/strong>: to each ramen bowl pour a couple ladles full of hot broth and gently blend it with the sesame paste. Followed by cooked ramen noodles and saut\u00e9ed ground tofu. Garnish with blanched vegetables, toasted sesame seeds, chili oil and green onion. Mix everything will with your chopsticks and\/or soup spoon. your choice)<\/li><li>2 tsp minced ginger<\/li><li>2 tsp minced garlic<\/li><li>1-2 tbsp any neutral oil<\/li><li>1 tsp toasted sesame oil<\/li><li>2 tsp soy sauce<\/li><li>2-3 tbsp fermented chili bean paste** see ingredients description  (or miso or Gochujang )<\/li><li>1 tbsp sake (optional)<\/li><\/ul><h4>Soup Broth<\/h4><ul><li>1 quart vegetable or chicken stock<\/li><li>3 cups Unsweetened soy\/cashew or any plant milk<\/li><\/ul><h4>Sesame Paste<\/h4><ul><li>4 tbsp tahini<\/li><li>2 tbsp tamari Or soy sauce<\/li><li>2-3 tsp chilli garlic oil (or crisp)<\/li><li>1 tsp toasted sesame oil<\/li><li>2 tbsp white vinegar <\/li><\/ul><h4>Vegetables and Garnishes<\/h4><ul><li>4 baby bok choy, halved (or baby broccoli\/choy sum\/gailan or spinach )<\/li><li>4-6 medium shiitake sliced<\/li><li>toasted sesame seeds<\/li><li>1 spring onions, chopped<\/li><li>chili garlic oil or crisp for garnish<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<h4>Crumbled Tofu<\/h4><ol><li><p>Crumble the tofu block. Heat the\u00a0oil in a frypan. Add\u00a0minced garlic and ginger,<strong>\u00a0<\/strong>saut\u00e9 for a few seconds until fragrant.<\/p><p>Add the\u00a0crumbled tofu and fry for 2-3 minutes on high heat until it starts to brown. For crispier tofu, spread the tofu out on the pan and don\u2019t disturb for 2-3 minutes. Flip and cook again until you\u2019re happy with the golden crispy color. <\/p><p>Add\u00a0the fermented chili paste or Gochujang\/ miso or doubanjiang,\u00a0and sake if using. Saut\u00e9 well. Sprinkle some water and cook on low-medium heat until the liquid has fully absorbed, about 4-5 minutes. Take it off the heat and set aside.<\/p><\/li><\/ol><h4>Soup Broth<\/h4><ol><li><p>Add the\u00a0vegetable or chicken stock\u00a0and\u00a0plant milk\u00a0into a medium saucepan, bring it to a gentle boil, stir so it\u2019s evenly heated. Turn the heat to a gentle simmer until ready to use. (I used cashew milk for its richness)<\/p><\/li><\/ol><h4>Sesame Paste<\/h4><ol><li><p><strong>In <\/strong>a small add and blend together tahini,\u00a0soy sauce,\u00a0vinegar\u00a0and\u00a0chili oil\u00a0in a small bowl. Divide the paste into serving bowls.<\/p><\/li><\/ol><h4>Veggies and Noodles<\/h4><ol><li><p>Bring a saucepan of water to the boil. Add\u00a0the baby bok choy stems first and blanch for 10-20 seconds. Next dip the entire bok choy so the leafy parts blanch. Blanch the shiitake mushrooms for 30 seconds and drain.  <\/p><p>Bring the water back up to a boil. Add\u00a0the ramen noodles and cook as directed on the package. Drain and set aside.<\/p><\/li><\/ol><h4>Assemble<\/h4><ol><li><p>To assemble ladle the soup broth into each bowl with the sesame paste. Gently stir so the paste is well incorporated into the broth.
