Basically to keep me and my family off junk food. They are not exactly low in calories, but eat in moderate quantities; it provides you with heart healthy fats from almonds and pumpkin seeds, fiber in\u00a0psyillium which helps with digestive health,\u00a0cholesterol management and keeps you full longer.<\/div>\n<div>This time I played around with different measurements and ingredients just for the heck it. It turned out something between a nut brittle and chewy bar. And it&#8217;s pretty darn good!<\/div>\n<div>\u00a0I call these &#8220;<strong><em>Kind Bars<\/em><\/strong>&#8221; because it makes me happy, keeps my glucose level stable, which in return is better for my mood, that way I&#8217;m always nice person.<\/div>\n<div>These bars are sugar-free, gluten-free, super nutty, high fiber and wholesome. They are lightly sweetened, very crunchy and chewy. Best part is they are easy to make and handy for after school snack, road trips, <span class=\"aBn\" tabindex=\"0\" data-term=\"goog_919305139\"><span class=\"aQJ\">3:00 p:m<\/span><\/span> slump and whenever you need a little pick-me-up.<\/div>\n<div><\/div>\n<div><\/div>\n<div><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/11\/image27.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1970 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/11\/image27-819x1024.jpeg?resize=819%2C1024\" alt=\"image\" width=\"819\" height=\"1024\" srcset=\"https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2015\/11\/image27.jpeg?resize=819%2C1024&amp;ssl=1 819w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2015\/11\/image27.jpeg?resize=240%2C300&amp;ssl=1 240w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2015\/11\/image27.jpeg?resize=588%2C735&amp;ssl=1 588w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2015\/11\/image27.jpeg?resize=344%2C430&amp;ssl=1 344w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2015\/11\/image27.jpeg?w=1944&amp;ssl=1 1944w\" sizes=\"auto, (max-width: 819px) 100vw, 819px\" \/><\/a><\/div>\n<div><\/div>\n<p><strong>Kind bars<\/strong><\/p>\n<div>Makes about 18-20, 1 inch by 4 inch bars<\/div>\n<div>\n<ul>\n<li>1\/4 cup (30g) psyllium<\/li>\n<li>1 cup raw almonds\u00a0roughly chopped<\/li>\n<li>3\/4 cup raw green pumpkin seeds also called pepitas<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>1 tablespoon<a href=\"http:\/\/www.nutrilious.com\/?p=1980\"> almond butter<\/a><\/li>\n<li>1\/2 cup dried whole organic cranberries roughly chopped<\/li>\n<li>1\/4 cup pure maple syrup<\/li>\n<li>1\/4 teaspoon salt flakes\/ fleur de sal<\/li>\n<\/ul>\n<\/div>\n<div><\/div>\n<div>\n<div>\n<h3>Directions:<\/h3>\n<div>\n<ol>\n<li>Preheat oven to 300\u00b0F.<\/li>\n<li>Line a 9-inch square baking pan with parchment paper which also covers the sides for easy lifting. Set aside.<\/li>\n<li>In a mixing bowl add psyllium, maple, vanilla, almond butter. Mix well. Add cranberries, chopped almonds and pumpkin seeds. Mix well until evenly distributed.<\/li>\n<li>Transfer mixture on to prepared baking pan and press very firmly into an even layer about 1\/2 inch thick. I used a large metal spatula. Press and pack down as tight as possible.<\/li>\n<li>Bake for 25 minutes. Remove from the oven and allow to cool completely in the pan for an hour. Using the overhang parchment paper lift the nutty slab out.<\/li>\n<li>Use a sharp knife cut into 1 inch by 3-4 inch bars.
