Pico de Gallo is perhaps one of the simplest Mexican side\/dip to make, it always comes to the table first in a Mexican restaurant and universally loved.  So let\u2019s make pico de gallo while the best summer tomatoes are still here. You will need only six ingredients if you count the salt as well. Ripe tomatoes, onion, jalape\u00f1o\/serrano, cilantro, lime and kosher salt. In the summer I love heirlooms or for year round Campari, Roma are the next best choice, cherry tomatoes or any red, ripe tomato will work.<\/li><li>This salsa needs a lot of chopping. Start with onion, jalepeno and lime juice. Allow the three ingredient to marinate, this helps soften and tone down the sharpness of the onions. <\/li><li>With salt present the tomatoes will release a lot of moisture. And before you know the bowl is half full of tomato juice. <\/li><li>I recommend drain the juice before serving, specially if serving with chips. The juice is perfectly delicious and healthy so don&#8217;t toss it out.<\/li><li>For the best flavor, allow the mixture marinate for 15 minutes at least in the refrigerator before serving as a dip, or drain with a slotted spoon to avoid transferring tomato juice with your pico.\u00a0<\/li><li>In terms of spiceness Serrano is hotter than Jalepeno.<\/li><li>Pico de Gallo stays well in the refrigerator, covered, for up to 4 days.<\/li><\/ul>\n\n\n\n<div class=\"wp-block-image is-style-default\"><figure class=\"aligncenter size-large is-resized\"><a href=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-819x1024.jpg\" alt=\"\" class=\"wp-image-17588\" width=\"946\" height=\"1183\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-819x1024.jpg 819w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-240x300.jpg 240w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-768x960.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-1229x1536.jpg 1229w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315-1638x2048.jpg 1638w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2021\/08\/DSC_1315.jpg 2000w\" sizes=\"auto, (max-width: 946px) 100vw, 946px\" \/><\/a><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1\u00a0pound ripe tomatoes, about\u00a03-4\u00a0large, chopped<\/li><li>1-3\u00a0medium Jalape\u00f1o or Serrano pepper, finely chopped (ribs and seeds removed, if sensitive to spice or omit altogetherggt, or add another if you love heat) <strong>Serrano is hotter than Jalepeno <\/strong><\/li><li>3-4 tablespoons\u00a0lime juice<\/li><li>3\/4 teaspoon\u00a0fine sea salt, more to taste<\/li><li>1 small-medium finely chopped onion, red or white are the best choice<\/li><li>\u00bd cup\u00a0finely chopped fresh cilantro <\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>In a medium serving bowl, combine the chopped onion, jalape\u00f1o or Serrano, lime juice and salt. Allow it marinate for about 5 minutes while you finish chopping the tomatoes and cilantro.<\/li><li>Add the chopped tomatoes and cilantro to the bowl and stir to combine.
