We make a large batch and add extra veggies and serve it with rice for a complete meal. This chowder is a lighter option when you want a soothing Thai soup thats not quiet a curry. It has all the elements of a Thai curry, but not as rich because part of the coconut milk is replaced with a light aromatic broth. I like it with lots of lime juice and green chillies. But I recommend serving them as garnishes because not everyone likes it that robust. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hope you enjoy this delicious and fragrant soup. <\/p>\n\n\n\n<figure class=\"wp-block-heading\">Thai Style Salmon Chowder, SERVES 4<\/h4>\n\n\n\n<h4 class=\"wp-block-heading\">Thai Broth:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>4 cups\u00a0of low sodium fish or vegetable or chicken stock<\/li><li>2\u00a0inch\u00a0sliced\u00a0fresh ginger<\/li><li>1\u00a0medium onion chopped into big chunks<\/li><li>2\u00a0cloves\u00a0of garlic\u00a0roughly chopped<\/li><li>5-6 kaffir lime leaves, torn<\/li><li>1-2 stalks lemongrass, bottom white and green part, avoid the dry top,\u00a0bruised and sliced into about 1 inch pieces<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Soup:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>1 \u00bd\u00a0pounds\u00a0wild salmon fillet\u00a0pin bones removed, cut into 1-inch cubes<\/li><li>1\u00a0tablespoon\u00a0finely chopped\u00a0fresh ginger<\/li><li>3-4\u00a0cloves\u00a0of garlic\u00a0minced, about 1 heaped teaspoon<\/li><li>1\u00a0medium shallot\u00a0chopped<\/li><li>2-3\u00a0tablespoons\u00a0lime juice\u00a0freshly squeezed<\/li><li>1-2 thai green chillies or jalape\u00f1o\u00a0<\/li><li>1-2 tablespoons fish sauce or soy sauce, (though fish sauce is what makes this soup)<\/li><li>1\u00a0tablespoon\u00a0coconut\u00a0any neutral oil<\/li><li>4 oz shiitake mushrooms<\/li><li>1\u00a0can\u00a015 oz. full fat coconut milk<\/li><li>2\u00a0green onions\u00a0thinly sliced<\/li><li>2-3 kaffir lime leaves, chiffonade<\/li><li>\u00a0fresh cilantro\u00a0chopped for garnish<\/li><li><strong>Add Ons<\/strong><\/li><li>1-2\u00a0cup\u00a0broccoli florets\u00a0washed and steamed separately<\/li><li>1 red bell pepper, thinly sliced<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li><strong>Thai<\/strong> <strong>Broth:<\/strong>\u00a0Place all the broth ingredients in a medium sized saucepan. Bring it to a boil, and then turn it down to medium-low heat, cover and simmer for 30-35 minutes. Strain the broth and discard the solids. * Set it aside.<\/li><li>Heat oil in a large saucepan over medium heat. Add in the shallots and mushrooms, cook saut\u00e9ing for it for 2-3 minutes. Add in the ginger and garlic and cook for 45 seconds.<\/li><li>Add in the reserved fragrant broth along with the can of coconut milk and fish sauce. Bring the mixture to a boil and then let it simmer for 7-8 minutes. <\/li><li>Lower the heat to medium-low and stir in the salmon cubes. Gently cook for 3 minutes with just a simmer, so the salmon poaches in the broth.<\/li><li>Turn the heat off and add the lime juice as needed to brighten the flavor. Check the seasoning before plating.<\/li><li>Serve garnished with scallions, extra lime juice, kaffir lime chiffonade and cilantro. Add the veggies like broccoli and red pepper now if using.<\/li><li>Can also serve it with steamed rice to make a complete meal.<\/li><\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Notes:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>You can make the broth a day or two in advance and refrigerate it in an airtight container.<\/li><li>It is imperative that the broth is simmering when you add the salmon, poaching salmon in the broth gives it soft and delicious texture. <\/li><li>I prefer steaming the veggies like broccoli and bell pepper and adding it while plating the chowder.
