It&#8217;s a national dish, its a cookware and a national treasure of Morocco. We went on a vacation to this North African country a few years ago and absolutely loved our trip. The sights, history, landscape, desert adventures were breathtaking. The people are really nice, we loved the culture, colors, art and of course the food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In Morocco every meal is Tagine, I kid you not! we were offered it everyday, and at the end of the trip I was ready for anything that&#8217;s not tagine or couscous. Don&#8217;t get me wrong we loved all the tagines, but at the end of day 10 there is only that much we could eat. Anyway I learnt a couple of Tagine recipes on my trip one by our Airbnb host and one at a class, this is my interpretation. I make it simple with chicken and olives and have veggies on the side. I find adding veggies takes away the flavor of a delicious chicken version. I do love a good simple<a href=\"http:\/\/www.nourishdeliciously.com\/?p=4835\"> vegetarian tagine<\/a>, but for chicken I prefer serving veggies on the side. Best served with plain couscous or rice and naan. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"814\" height=\"1024\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-814x1024.jpg\" alt=\"\" class=\"wp-image-15229\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-814x1024.jpg 814w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-239x300.jpg 239w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-768x966.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-1221x1536.jpg 1221w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290-1629x2048.jpg 1629w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/11\/DSC_3290.jpg 1988w\" sizes=\"auto, (max-width: 814px) 100vw, 814px\" \/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Chicken Tagine with Olives Serves 5-6<\/h4>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>6-8\u00a0bone in skinless chicken thighs, about 2 lbs<\/li><li> 2 teaspoons garlic about 7-8 cloves,\u00a0finely chopped<\/li><li>1\u00a0teaspoon\u00a0smoked sweet paprika<\/li><li>1\u00a0teaspoon\u00a0ground cumin<\/li><li>1 inch fresh or 1\u00a0teaspoon\u00a0ground ginger ( I prefer fresh)<\/li><li>1 teaspoon ground cinnamon<\/li><li>1 teaspoon hot paprika, (<em>if you like a little heat<\/em>)<\/li><li>1\/2\u00a0teaspoon\u00a0saffron threads\u00a0crushed<\/li><li>1\/2\u00a0teaspoon\u00a0turmeric<\/li><li>sea salt and freshly ground black pepper<\/li><li>2\u00a0tablespoons\u00a0olive oil<\/li><li>3 medium onions, thinly sliced<\/li><li>1 cup\u00a0green castelvetrano olives, pitted<\/li><li>1\u00a0lemon, peeled into thick slices (use a vegetable peeler to peel the lemon peel into thick 1 inch strips)<\/li><li>1\u00a0cup\u00a0chicken stock<\/li><li>Juice of 1\/2 lemon<\/li><li>1\/4 cup\u00a0chopped herbs like mint, cilantro and flat-leaf parsley<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Mix garlic, ginger, both paprikas, cumin and turmeric together with \u00bd teaspoon of salt and freshly cracked black pepper. Rub the chicken with mixture, cover, and refrigerate to marinate for 3 to 4 hours.<\/li><li>Heat oil in heavy skillet. Add chicken, and brown on all sides undisturbed. <\/li><li>Transfer to plate and set aside. Add onions to skillet, and cook over medium-low heat about 15 minutes till they begin to caramelize. Add the ground cinnamon,\u00a0saffron and stir to combine.<\/li><li>Place chicken on onions. Scatter with olives and the lemon strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken.<\/li><li>Cover the skillet and place over low heat, and cook about 30 minutes, until chicken is cooked through.
