Over the years that Ive been making this stew I developed a simple version we really enjoy as a main or side dish. Most times I don&#8217;t use coconut milk or cashews typically don&#8217;t add cashews unless its for special occasions, this time for Diwali. Its rich, spiced and so delicious. Another little trick I use to make it cook faster and without a whole lots of oil is to dry roast the cauliflower in the oven or air fryer. <\/p>\n\n\n\n<p>This is for two reasons, one it reduces the moisture in the cauliflower intensifying the flavor and two because its partly cooked it dosent need that much oil the saut\u00e9. I also like to make a quick finishing garam masala which is optional but we love the fresh aromatic flavor of spices. Finishing masala is just a few spices ground up in coffee blender, usually cardamom, cinnamon, star anise, cloves, fennel etc. You can totally use store bought or garam masala you currently have, this is something I make for special occasions or sometimes I have it saved from a previous recipe. <\/p>\n\n\n\n<figure class=\"wp-block-gallery columns-2 is-cropped wp-block-gallery-1 is-layout-flex \/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Gobi Maatar Korma<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>1\u00bd\u00a0tablespoon any neutral\u00a0oil\u00a0or ghee or coconut oil<\/li><li>1 medium sized\u00a0cauliflower\u00a0broken into medium sized florets<\/li><li>1 heaped\u00a0cup\u00a0green peas, frozen defrosted or better still fresh<\/li><li>1 medium yellow about 1 cup\u00a0onion\u00a0finely chopped or grated\u00a0<\/li><li>1\u00a0hot\u00a0green chili, chopped, optional\u00a0<\/li><li>3 fresh Roma tomatoes about 1\u00a0cup\u00a0tomatoes\u00a0finely\u00a0chopped or pureed for smooth curry<\/li><li>1\u00a0teaspoon fresh minced ginger<\/li><li>1 teaspoon leveled ground cumin<\/li><li>1 leveled teaspoon ground coriander<\/li><li>\u00bd- 1 teaspoon garam masala, homemade or store bought, <em>recipe for a quick finishing masala follows<\/em><\/li><li>\u00bd-1\u00a0teaspoon\u00a0red chili powder\u00a0(Indian) Lal mirch<\/li><li>water\u00a0as needed to thin out<\/li><li>\u00bc cup raw cashews about 8, soaked and blended long with the coconut milk<\/li><li>1 cup light coconut milk or water<\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Finishing Garam Masala <\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00bc to \u00bd\u00a0piece\u00a0star anise\u00a0<\/li><li>4 green cardamom\u00a0<\/li><li>1\u00a0small\u00a0cinnamon\u00a0stick about 1 inch<\/li><li>3\u00a0cloves\u00a0whole<\/li><li>1\/2 teaspoon fennel seeds<\/li><li>\u00bc teaspoon nutmeg<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Preheat the oven to 400\u00b0F.<\/li><li>If you&#8217;re making your own finishing masala ( <em>I highly recommend)<\/em>. Put all the ingredients listed in a coffee grinder and grind it to a smooth fine powder. Set aside or transfer to a clean small jar. <\/li><li>Place the cauliflower florets on a baking sheet and roast the florets for 15 minutes till they begin to soften. <em>You don&#8217;t have to cook it all the way because we&#8217;ll finish cooking it in the spice mix. <\/em><\/li><li>Heat oil in a large skillet or wok. Add the onions and saut\u00e9 till the onions start to turn golden.  Add ginger, chillies and saut\u00e9 for 1-2 minutes.<\/li><li>Add chopped tomatoes along with salt. Fry till the tomatoes turns soft. <\/li><li>Add all the ground spices and saut\u00e9 well for 2 minutes.<\/li><li>Add peas and partially roasted cauliflower. Mix and saut\u00e9 for 2-3 minutes so the spice coats the vegetables.. Add coconut milk and bring it to a gentle boil.<\/li><li> Cook for another 4-5 minutes till the cauliflower is tender but still holds its shape. Taste and season as needed. <\/li><li>Add chopped cilantro leaves before serving.
