Every now and then I crave a good hearty Italian meal that&#8217;s not pasta, something you find in little trattoria&#8217;s in the Tuscan countryside. Anyway this delicious soup is hearty and easy for weekend meal prep that actually tastes good with time. A mix of vegetables, white beans, quinoa simmered with broth, topped with pesto and parm. Finished each bowl off with an extra sprinkle of parm and serve with crusty bread. It\u2019s hearty, full of greens, and so delicious. Great for just about any night of the week. Plus the leftovers the next day make for the best lunch!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"997\" height=\"1024\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-997x1024.jpg\" alt=\"\" class=\"wp-image-14675\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-997x1024.jpg 997w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-292x300.jpg 292w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-768x789.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-1496x1536.jpg 1496w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/10\/DSC_2459-1995x2048.jpg 1995w\" sizes=\"auto, (max-width: 997px) 100vw, 997px\" \/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Lemony Kale Soup with Cannellini Beans &amp; Quinoa SERVES 2-4<\/h4>\n\n\n\n<h5 class=\"wp-block-heading\">INGREDIENTS<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>1-2 tablespoons olive oil<\/li><li>2-3&nbsp;cups&nbsp;roughly torn Curly or Tuscan kale about 4-5 large leaves <\/li><li>1 can (14 ounces)&nbsp;can white cannellini beans, drained and rinsed<\/li><li>5-6&nbsp;cups&nbsp;low-sodium chicken or veggie stock, <em>use more for brothy soup<\/em><\/li><li>\u00bc&nbsp;cup&nbsp;uncooked quinoa, <em>I used a mix of white and red<\/em><\/li><li>1&nbsp;large leek, washed and chopped thinly or use 1 largish onion<\/li><li>2 large cloves garlic, sliced<\/li><li>2&nbsp;medium&nbsp;carrots, sliced<\/li><li>2 tablespoons basil pesto, homemade or store bought<\/li><li>\u00bd-1&nbsp;teaspoon&nbsp;crushed red pepper flakes to your taste<\/li><li>3&nbsp;tablespoons&nbsp;lemons juice, plus more for serving <\/li><li>1&nbsp;parmesan rind, optional <\/li><li>Sea salt and pepper<\/li><li>1\/4 cup grated parmesan, for serving<\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">INSTRUCTIONS<\/h5>\n\n\n\n<ol class=\"wp-block-list\"><li>In a large sauce pan warm the olive oil, add the chopped leeks and garlic. Saut\u00e9 for 3-4 minutes till it starts to soften.<\/li><li>Add the carrots, quinoa and stir. Add the white beans, stock, parmesan rind(<em> if using<\/em>), chili flakes, salt and pepper, cook for 12-15 minutes till quinoa has cooked. <em>Add \u00bd cup more broth if you like it brothy<\/em>.<\/li><li>Add the chopped kale and combine, bring it up to a boil and take it off the heat. <\/li><li>Stir in the pesto, lemon juice and half the parmesan cheese.<\/li><li>Divide into bowls and serve with extra lemon slices, pesto and parm.
