I first had it as the classic miso soup while transiting through Narita airport in Japan. I had a really bad headache and needed something warm to soothe my nerves. I told the elderly lady behind the counter and she kindly made me miso soup with veggies and was just the thing I needed. That day I fell in love with miso. Ever since it&#8217;s a pantry staple or should I say fridge staple in my house and I use it soups, an excellent base for salad dressing, as a sauce for roast veggies specially eggplant. This pasta recipe is a bit unsual but it makes complete sense. Miso butter is the best thing to use in pastas, it gives the noodles that rich creamy, salty, umami flavor and works specially well with mushrooms. The recipe is rich so the portions are relatively small at least for my taste. I love white Saikyo shiro miso, it has a clean mild flavor and very versatile. Use shiro for milder flavor, red for a bit robust flavor.<\/li><li>Cook the mushrooms in 2-3 batches and not overcrowd the pan to allow them to brown evenly.\u00a0This is important because mushrooms are the key ingredient and texture matters.<\/li><li>Add cream for more sauce. I cut out cream for lower calories, but cream makes it ultra delicious.<\/li><li>Remember miso is salty and pasta cooking water has salt too so be careful while adding extra salt.<\/li><\/ul>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"819\" height=\"1024\" src=\"https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=819%2C1024\" alt=\"\" class=\"wp-image-13981\" srcset=\"https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=819%2C1024&amp;ssl=1 819w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=240%2C300&amp;ssl=1 240w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=768%2C960&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=1229%2C1536&amp;ssl=1 1229w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?resize=1638%2C2048&amp;ssl=1 1638w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/08\/DSC_1265.jpg?w=2000&amp;ssl=1 2000w\" sizes=\"auto, (max-width: 819px) 100vw, 819px\" \/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Spaghetti with Mushrooms and Miso Butter, SERVES 3-4<\/h4>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients&nbsp;<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>1-11\/2 lbs mixed\u00a0mushrooms (I use a mix of shimeji, eryngii, and oyster mushrooms, most mushroom combinations are good, ONLY <em>avoid Chinese shiitake it has a strong flavor, unless you like it<\/em>)<\/li><li>7-8 oz good quality spaghetti, 2 oz per person<\/li><li>\u00a0olive\u00a0oil as needed about 1-2 tablespoons<\/li><li>1\u00a0teaspoon\u00a0rice\u00a0or white wine vinegar<\/li><li>2-3\u00a0tablespoons\u00a0shiro or\u00a0red miso paste (<em>shiro for milder flavor, red for a bit robust flavor)<\/em><\/li><li>2-3 tablespoons regular or vegan\u00a0butter, softened, both are delicious<\/li><li>2 tablespoons cashew paste\u00a0or 1\/4 cup cream<\/li><li>5\u00a0garlic cloves, about 1 generous tablespoon\u00a0<\/li><li>1\/2\u00a0cup\u00a0pasta cooking water<\/li><li>1\u00a0teaspoon Korean Chile threads and\/or a\u00a0stalk of scallion, finely sliced<\/li><li>\u00a0sea\u00a0salt, as needed, remember miso is pretty salty<\/li><li>\u00a0black pepper, as needed<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Bring a large pot of water to a rolling boil. Season generously with salt, add dried pasta. Cook the pasta until just under al dente (a minute less than on its package directions), save about 1\/2 cup of cooking water,  drain the pasta and set aside.<\/li><li>Chop or break apart the mushrooms into large, bite-sized chunks. Then, heat a large skillet over high heat with a tablespoon of olive oil, saut\u00e9 the mushrooms for 3-5 minutes until nicely browned. <\/li><li>When the mushrooms are browned, add the vinegar to the pan with the mushrooms, give them a little toss, and set aside. <em>Cook the mushrooms in 2-3 batches and not overcrowd the pan to allow them to brown evenly.\u00a0<\/em><\/li><li><strong>Make the sauce<\/strong>, whisk the miso paste, cashew paste and butter together in a small bowl to form a smooth, fluffy paste.\u00a0<\/li><li>In a medium saucepan, add the minced garlic and a tablespoon of oil, and stir-fry over medium heat for 30 seconds to a minute until fragrant.<\/li><li>Add in the saut\u00e9ed mushrooms, miso-butter mixture and <em>cream if using<\/em>, and bring this sauce to a gentle boil, stirring gently. <\/li><li>Toss the cooked pasta into the sauce, and stir until the pasta is well coated.
