Trader Joes roasted tomato red pepper soup being one of them. I like to keep a couple in my pantry along with some of our other favorites. Having said that on this occasion I thought of making my own with my homegrown tomatoes that are over flowing, this seemed lime a great idea. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I am so happy with the recipe and I hope you love it too. The recipe is inspired from the list of ingredients on the back of the box, I did sub a few ingredients to keep it simple, there is no cream though a little of cream always makes things yummier. I blitzed the roasted tomatoes until smooth and thick in a high speed blender to achieve the same consistency as a bisque, (<em>you can totally strain at this point if your blender can&#8217;t to the job<\/em> for that velvety texture). Simply add a good generous drizzle of olive oil and seasoning. Then blend with herbs, a little veggie broth,  store bought jarred tomatoes, (<em>you can roast peppers along with the tomatoes if you wish). <\/em>it&#8217;s that simple. For fun I made some quinoa wafers making this bisque substantial for a complete meal. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-1024x1024.jpg\" alt=\"\" class=\"wp-image-13719\" width=\"762\" height=\"762\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-1024x1024.jpg 1024w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-300x300.jpg 300w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-150x150.jpg 150w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-768x768.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-1536x1536.jpg 1536w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-2048x2048.jpg 2048w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-320x321.jpg 320w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_0643-500x500.jpg 500w\" sizes=\"auto, (max-width: 762px) 100vw, 762px\" \/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Roasted Red Pepper and Tomato Soup, SERVES 4<\/h4>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>2.5 lbs\u00a0tomatoes\u00a0any variety, you can use upto 3 lbs<\/li><li>1 onion\u00a0halved and sliced<\/li><li>2\u00a0cups vegetable broth<\/li><li>14\u00a0oz\u00a0jarred roasted red peppers<\/li><li>5-7 cloves\u00a0garlic\u00a0peeled<\/li><li>3-4 tablespoons\u00a0extra virgin olive oil<\/li><li>sea salt as needed<\/li><li>\u00bc\u00a0teaspoon cracked black pepper<\/li><li>a little maple syrup or honey to balance the flavor<\/li><li>GARNISH<\/li><li>Quinoa Wafers, recipe follows<\/li><li>Herbs, basil, dill chopped as needed<\/li><li> fresh cracked black pepper, optional<\/li><li>cream, optional<\/li><li>QUINOA WAFERS<\/li><li>1\/2 cup cooked quinoa<\/li><li>1\/2 cup parmesan cheese<\/li><li>1\/4 teaspoon cracked black pepper<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Preheat oven to 400\u00b0 F. Depending the kind of tomatoes halve or quarter tomatoes, leave cherry tomatoes whole<em>.&nbsp;<\/em><\/li><li>Spread the tomatoes on a parchment-lined baking sheet with the sliced onion and the garlic cloves peeled and separated. Drizzle with the olive oil&nbsp;<em>&nbsp;<\/em>and season with sea salt<em>&nbsp;<\/em>and pepper<em>.&nbsp;<\/em>Bake for 30-40 minutes to your desired softness<em>.<\/em><\/li><li>Heat up veggie stock in a pot on the stove.<\/li><li>Transfer the roasted tomatoes, onions, garlic, entire jar of roasted red pepper, warm veggie stock to a high speed blender (<em>you may need to do this in batches<\/em>). alternatively place all the ingredients in a stock pot and use an immersion blender to puree the soup directly in the pot<em>.<\/em><\/li><li>Use a mesh sieve to strain the soup into another pot or large container, using a wooden spoon to squeeze as much liquid out as possible. Discard solids left behind. This will result in a very smooth bisque.<\/li><li>Stir in heavy cream&nbsp;<em>(1\/4 cup).&nbsp;<\/em>Taste and season with salt and pepper, if necessary.Serve hot with quinoa wafers, fresh basil, black pepper and cream if desired.<\/li><li>QUINOA WAFERS: to make the wafers mix cooked quinoa, parmesan cheese and black pepper in a bow. Place the mixture on a parchment lined baking paper, spreading it even and thinly. Bake in a 400 \u00b0F oven for 7-10 minutes till it gets lightly golden keeping a close eye, this burns very quickly.<\/li><li>Cool before breaking into pieces. Alternatively you can the place 1 tablespoon mounts on the baking tray, <em>the cheese will melt and spread like cookies. <\/em><\/li><\/ul>\n\n\n\n<figure class=\"wp-block-gallery columns-2
