There are a few tips I have learnt to achieve that perfectly flavorful and textured fried rice that we have come to love so much.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-1024x800.jpg\" alt=\"\" class=\"wp-image-13469\" width=\"868\" height=\"678\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-1024x800.jpg 1024w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-300x234.jpg 300w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-768x600.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-1536x1201.jpg 1536w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/07\/DSC_9709-2-2048x1601.jpg 2048w\" sizes=\"auto, (max-width: 868px) 100vw, 868px\" \/><\/figure><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Notes for Perfect Kimchi Fried Rice<\/strong><\/li><li>Squeeze the kimchi juice out of your Kimchi and set aside, you\u2019ll need about 1\/2 a cup.This is an important, we need the kimchi as dry as possible to get a good caramelization called (Maillard browning) The juice gets added later with the aromatics to flavor the rice.<\/li><li>Add toasted sesame oil to the rice before it goes into the pan, so each grain is separated and injected with more flavor.\u00a0<\/li><li>Start by saut\u00e9ing-frying the squeezed Kimchi until it\u2019s well browned, this adds flavor and color.<\/li><li>Fry the rice stirring constantly so all of the liquid from the juice has evaporated, the rice is done when each grain is separated, a little dry and looks fluffy.\u00a0<\/li><li>While frying make sure the rice is undisturbed, this gives the rice enough contact time to brown, giving it a wonderful toasty flavor (<em>like a good socarrat on the bottom of a good Persian rice or paella<\/em>).\u00a0<\/li><li>Traditionally fried eggs are used to garnish, I kept it vegan by adding a cup full of pan fried crumbled tofu.  <em>I also like to serve extra <a href=\"http:\/\/www.nourishdeliciously.com\/?p=11989\" title=\"http:\/\/www.nourishdeliciously.com\/?p=11989\">stir fried veggies. <\/a><\/em><\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">KIMCHI FRIED RICE, SERVES 4 <\/h4>\n\n\n\n<h5 class=\"wp-block-heading\">INGREDIENTS<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup packed mature kimchi chopped<\/li><li>1\/2 cup kimchi juice, squeezed from the kimchi<\/li><li>4 cups cooked, day old rice, short grain preferred<\/li><li>2\u00a0heaped tablespoons gochujang paste<\/li><li>2 small garlic cloves grated<\/li><li>1\u00a0tablespoon tamari or soy sauce<\/li><li>1-1\/2  tablespoons toasted sesame oil<\/li><li>2\u00a0tablespoon any neutral oil I used avocado<\/li><li>1 cup pan fried crumbled tofu or one fried egg per person<\/li><li>TO GARNISH<\/li><li>1-2 scallion\u00a0green onion<\/li><li>1 teaspoon furikake or toasted sesame seeds<\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">INSTRUCTIONS<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>Squeeze the juice out of it into a liquid measuring cup, this liquid is the &#8220;kimchi juice.&#8221;<\/li><li>Dissolve the kimchi juice with gochujang, grated garlic and tamari or soy sauce together until the gochujang is completely dissolved.<\/li><li>Drizzle the sesame oil over the rice, using your fingers mix well separating the grains and each grain of rice is coated with oil, making sure there are big clumps.<\/li><li>In a large frying pan or wok heat the tablespoon of oil over medium-high heat until hot. Add the chopped kimchi and stir-fry until the kimchi fragrant and is starting to brown.<\/li><li>Add the rice and stir-fry undisturbed for a minute or 2 to achieve the toasty golden color, add the kimchi juice-gochujang mixture over the rice, and turn up the heat to high. <\/li><li>Stir-fry, tossing the rice occasionally until the rice starts to brown, about 3-4 minutes.<\/li><li>Taste to adjust the seasoning, you may need more salt. <\/li><li>Served garnished with crumbled tofu or fried eggs, furikake or sesame seeds and sliced scallions and then plate.
