I love eating fresh salads to start my dinner, cucumber salad like this are light and pairs beautifully with summer grills or just as is. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Just a few things to note:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li> <em>You can use any berry you like or any summer stone fruit works well.<\/em><\/li><li><em>Choose Persian cucumber for this recipe, but if you prefer English make sure you slice them thinly. Persian are sweeter and have fewer seeds. <\/em><\/li><li><em>I added olives, zaatar and sumac for more flavor, but its totally optional. This salad works with the lemon dressing just fine. Enjoy.<\/em><\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Herbed Blueberry Cucumber Salad<\/h5>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup&nbsp;walnuts, lighted toasted<\/li><li>1&nbsp;bunch radishes, about 5-6, thinly sliced<\/li><li>1.5 cups fresh blueberries or fresh baby tomatoes<\/li><li>4-5&nbsp;Persian cucumbers, thinly sliced or <em>use 1&nbsp;large English cucumber, I prefer Persian, they are sweeter and have fewer seeds<\/em><\/li><li>\u00bd cup sliced kalamata olives<\/li><li>\u00bd-1 cup&nbsp;chopped parsley<\/li><li>\u00bd-1 cup&nbsp;chopped cilantro<\/li><li>\u00bd cup&nbsp;chopped mint<\/li><li>\u00bc-\u00bd&nbsp;cup chopped dill<\/li><li>\u00bd cup&nbsp;chopped scallion <\/li><li><strong>DRESSING<\/strong><\/li><li>2-3 tablespoons cold pressed e.v olive oil<\/li><li>3 tablespoons&nbsp;fresh lemon juice, more to taste<\/li><li>1 tablespoon&nbsp;lemon zest<\/li><li>\u00bd teaspoon zaatar<\/li><li>\u00bd sumac <\/li><li>salt and pepper to taste<\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Instructions<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>Lightly toast the walnuts by placing them on a baking pan, in a 350\u00b0F oven for 10-12 minutes. <\/li><li>When they give out a pleasant nutty smell, take them out and leave it to cool.<\/li><li>Place cooled walnuts along with remaining ingredients in a &nbsp;large bowl and toss well with dressing little by little. <\/li><li>Taste, adjust the dressing and seasoning as needed.. <\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-682x1024.jpg\" alt=\"\" class=\"wp-image-13167\" width=\"742\" height=\"1113\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-682x1024.jpg 682w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-200x300.jpg 200w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-768x1153.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-1023x1536.jpg 1023w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2-1364x2048.jpg 1364w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/06\/DSC_7524-2.jpg 1665w\" sizes=\"auto, (max-width: 742px) 100vw, 742px\" \/><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>A fresh herby salad punctuated with a hint of zaatar, sumac and lemony dressing.
