Rather, its a sauce made with ground meats and flavored with tomato paste or a little tomato sauce. Ragu is rich and meaty, should be cooked gently without high heat. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rag\u00f9 ideally should be served with fresh long pasta, preferably egg pasta. I didn&#8217;t have long egg pasta so I served it with penne, which actually worked out well because the sauce hides in the hollow insides giving a delicious tightly woven mouthfeel. I made the sauce with ground turkey for a lighter meat and enhanced the flavors with fennel, olive oil and a good dry red wine to give the sauce the rich flavor you would get from red meats. and it worked really well.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-819x1024.jpg\" alt=\"\" class=\"wp-image-12969\" width=\"735\" height=\"919\" srcset=\"https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-819x1024.jpg 819w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-240x300.jpg 240w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-768x960.jpg 768w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-1229x1536.jpg 1229w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1-1638x2048.jpg 1638w, https:\/\/www.nourishdeliciously.com\/wp-content\/uploads\/2020\/05\/DSC_8230-5-1.jpg 2000w\" sizes=\"auto, (max-width: 735px) 100vw, 735px\" \/><\/figure>\n<\/div>\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>RAGU WITH PENNE<\/strong> SERVES 6<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2&nbsp;tablespoons&nbsp;olive oil<\/li>\n\n\n\n<li>1 tablespoon butter<\/li>\n\n\n\n<li>12-14 oz penne or any pasta of your choice<\/li>\n\n\n\n<li>1 small onion&nbsp;minced<\/li>\n\n\n\n<li>1 medium carrots&nbsp;minced<\/li>\n\n\n\n<li>4-5&nbsp;cloves&nbsp;garlic (minced)<\/li>\n\n\n\n<li>\u00bd small fennel bulb&nbsp;minced, normally celery is added but I had fennel<\/li>\n\n\n\n<li>16 oz&nbsp;organic&nbsp;ground lean turkey<\/li>\n\n\n\n<li>\u00bc cup tomato paste<\/li>\n\n\n\n<li>\u00bd teaspoon dried wild oregano&nbsp;<\/li>\n\n\n\n<li>1 cup&nbsp;chicken&nbsp;broth<\/li>\n\n\n\n<li>\u00bd&nbsp;cup&nbsp;Dry red wine, I like a good Cabernet here<\/li>\n\n\n\n<li>1\/4&nbsp;grated parmesan or grana cheese<\/li>\n\n\n\n<li>Salt &amp; pepper to taste<\/li>\n<\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Instructions<\/h5>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Warm the butter and olive oil in a large pot over medium heat. Add the onion, carrot and fennel and cook for 5-7 minutes or until soft and translucent.<\/li>\n\n\n\n<li>Add the ground minced meat, garlic and cook, breaking up the meat with your spoon till it crumbles. Drain some of the fat leaving some to cook the meat. <em>Because turkey was lean I didn\u2019t do this.<\/em><\/li>\n\n\n\n<li>Add the wine and increase the heat until the wine has evaporated about 6 minutes.<\/li>\n\n\n\n<li>Reduce the heat and add the tomato paste, oregano, salt and pepper. Cook further for 10 minutes Stirring frequently. Add the stock and bring it to a gentle simmer. Cook for 30 minutes till the sauce has reduced slightly and has thickened, but not dry, it should be thick and moist. <\/li>\n\n\n\n<li>Meanwhile bring a large pot of Salted water to a boil and cook the pasta according to the package. Save 1\/4 cup of the cooking water.<\/li>\n\n\n\n<li>Transfer the pasta to the sauce pot. Mix very well, adding a little pasta water if needed. The sauce should stick to the pasta and look shiny.
